With this new menu, we would like to take you on an exciting journey: a journey along future-oriented management in cycles. For more than 20 years, we have been cultivating our own agricultural land on the island of Rügen, which we use both for agriculture and for our species-appropriate, organic cattle farming. This allows us to completely cover the demand for beef for our gastronomy. Our next goal is to become more independent in the area of malting barley as well. Our first own grains from the island of Rügen were already malted this year at Ratsherrn in Hamburg.
This value chain ranges from the original production to the slaughter of the animals and the processing of the meat to you as the consumer. This way, we can make a contribution to more transparency in the food and nutrition industry. We supply our gastronomy with fresh quality beer and premium delicacies, so that you as a guest can enjoy your experience in a more sustainable way. Bon appétit & cheers!
